What do you sell at New Taste Marketplace?
I make and sell chicken sausage. As time goes on, I’ll add other meats and flavors.
Tell me your story: how did you begin making this product?
I made my first sausage about ten years ago. I started making my own sausage because I didn’t like not knowing what was in the food I ate. They say you never want to see sausage being made, but that’s not true in my kitchen. The best thing about making it yourself is you know what’s in it.
I decided to use ground chicken thighs for my sausage. Chicken thighs are just amazing in terms of their flavor and juiciness so I didn’t feel the need to add any fat–just herbs, spices and, occasionally, fruit. Oh, and whiskey. Whiskey Apple Breakfast Sausage is my newest creation.
What’s your cooking background?
No matter what people tell you, there is no such thing as a self-basting, self-roasting animal. Once you realize that basic fact about the world, it follows that you must learn how to cook.
I’ve never very good at following recipes. I inevitably do something wrong. I’ve tried to learn how to cook by learning about why ingredients act the way they do. At one point in my life, I decided that I didn’t really understand baking––it’s all so scientific and those recipes are so preachy. So I tried to try to learn how to bake in an intuitive fashion. I started by learning how to make crackers. Crackers moved into pan breads and scones and then into biscuits. I never really got beyond biscuits because yum… biscuits! Along the way, I tried to learn the whys and why-nots of baking; like how non-yeast leavening works and why preheating an oven is so important. I love that cooking offers so many different avenues for learning.
What is your favorite food?
I am a man of simple pleasures: bacon is the King of Foods and the Food of Kings. Sea urchin is neither food nor king of anything, except perhaps the Kingdom of Things that Taste like a Sailor’s Underpants.
What have you learned from participating in New Taste Marketplace?
This experience has been wonderful. I’ve got to experience all different sides of the food-making business, from sourcing products to graphic design to recipe development and packaging. It’s been a lot of fun.
What is your favorite part of selling sausage?
I love seeing the way people’s eyes light up when they taste my sausage.
